Vì nấu ăn gia đình nên mình thích cắt lát nạm bò ướp gia vị cho thấm rồi xào săn lên mới cho vào nồi nước dùng hầm giò heo. Cách làm này thì miếng nạm bò sẽ co lại nhìn không hấp dẫn nhưng ăn rất thấm vị.
Dựng heo, nạm bò rửa sạch, củ sắn gọt vỏ rửa sạch cắt lát. Cho dựng heo, củ sắn, hành tây cắt múi cau vào nồi hầm với 3 lít nước. Nạm bò cắt lát mỏng ướp 1/2 muỗng cà phê mắm ruốc, 3 củ hành tím băm, 1 muỗng cà phê muối, 2 muối cà phê nước mắm, 1 muối cà phê bột ngọt, 1/4 muối cà phê tiêu.
Bắc chảo với 3 muỗng canh dầu ăn phi thơm hành tím cho nạm bò lên xào khoảng 10 phút cho thịt thấm gia vị. Cho 2 muỗng canh dầu điều vô. Nước dùng hầm khoảng 30 phút thì vớt củ sắn ra, cho nạm bò vừa xào, sả cây đập dập, pha lưng muỗng cà phê mắm ruốc với xíu nước cho vô luôn, nêm thêm 2 muỗng cà phê đường, 1 muỗng cà phê hạt nêm, chờ giò mềm nêm nếm lại cho vừa ăn. Bún bò mà nêm thêm xíu ớt sa tế (ớt xào) tự làm thì sẽ rất ngon. Trụng bún cho ra tô chan nước dùng nóng, thêm tiêu, hành ngò, ớt sa tế, dọn kèm rau sống.
